There are a few 'hidden' settings within your Canvas course that you should be aware of. You can find all of these settings (and more) by clicking on "Settings" from your course navigation, then "Course Details" (instructions for accessing/editing course settings here).
Grading Schemes: You can set your own grading scheme within each Canvas course to customize the breakdown of percentages that earn an A, A-, B, etc. Once you create a custom grading scheme, you can enable it for any of your courses.
Grade Distribution Graphs: By default, Canvas enables students to view "grade distribution graphs", meaning that they can see where their grade falls in comparison to their peers. To turn this feature off, click "More options" and check the box that reads "Hide grade distribution graphs from students".
Discussion Boards: From within your Canvas settings, there are a few options related to the discussion boards, including the ability of students to create their own discussion threads, edit their posts, and attach files to their posts. Feel free to turn these on/off as you see fit for your particular class.

Once you've made your changes to your course settings, be sure to click the blue "Update Course Details" button to save your selections.
